Broiled Tomatoes

Like lycopene? You should! This cardiovascular disease-fighting nutrient is found in tomatoes, along with potassium, Vitamin C and folate. I know I’m a bit late, but tomatos are good for you all year long. Best in summer when tomatoes are at their peak, so grow your own or look for them at Farmers’ Markets.

Broiled Tomatoes Recipe

  • Large sandwich tomato{es}
  • Salt
  • Pepper
  • Garlic clove, minced
  • Fresh rosemary, snipped
  • Olive Oil

Preheat the oven to broil. Cut the tomato{es} in half and gently score the fleshy tops so the seasonings can absorb.

Place tomato halves on a baking sheet or stone. Sprinkle generously with salt, lightly with pepper. Add a pinch of minced garlic and a sprinkle of fresh rosemary. Drizzle with olive oil.

Broil for 15 minutes. Remove from oven and enjoy…as soon as the tomatoes cool a bit.
