A Simple Cherry Tomato and Mozzarella Salad

Fresh mozzarella, tomatoes, and basil are a classic combination, but sometimes the dish can be just a bit bland. By marinating the cherry-sized mozzarella balls in extra virgin olive oil, fresh basil, salt and pepper for a few hours, and then tossed with sweet cherry tomatoes and golden balsamic vinegar. It’s not bland now.


3 cups tomatoes (sweet cherry, homegrown are always the best!)
2 cups mozzarella cheese (ciliegiene, quartered, fresh if you can find it)
fresh basil (chopped fine)
olive oil (to coat)
fresh lemon juice (optional, I usually leave this out)
